Vinification process Baliatico is the result of the selection of the best Cabernet Sauvignon, Merlot and Petit Verdot grapes from our estate vineyards. The grapes, meticulously hand-picked, are fermented separately in steel tanks at a controlled temperature of 28°. The maceration period on the grape skins is about 18 days, during which pumping over and délestages alternate. The wine ageing takes place in first- and second-passage French barriques with medium toasting for about 18 months. After bottling, the wine ages in the bottle for about 12 months.
Limited edition Of the 2019 vintage, we produced 900 numbered bottles.
