Vinification The Chianti Colli Fiorentini DOCG "Diletta" comes from a blend composed of 100% Sangiovese. The fermentation takes place in stainless steel tanks at a temperature between 28°C and 30°C. The fermentation and break-up of the grape skin lasts for about 16 days.
Aging A 8 month aging in 20 hl new oak barrels is followed by a 3 month bottle aging period.
ORGANOLECTIC ANALYSIS
Colour Vivid ruby red with evident purplish reflections, and crystalline clarity.
Perfume Intense and complex aromas, notes of blueberry and wild berries, accompanied by slightly spicy scents.
Taste Rounded wine, moderately tannic, soft and sapid, overall balanced. Its main feature is persistence, which keeps it lively until the last sip.
